Over the past several months I have been going through a major transition in my life, one that required all my focus and determination to make it possible. It’s a transition that I didn’t think I was ready for, and yet I was doing it.
The change that I’m talking about is that I decided to go Vegan.
By the time Christmas rolled around, I was really pushing for an all Vegan diet, and I was tired of my half attempted approach to Veganism. I was either going to do it, or I wasn’t. I still had some non-Vegan Christmas goodies to get through at that point, and I vowed that once I finished all of it, that I would take the final step.
Come New Years day, and I made it my resolution, to at least learn the ways of Veganism and make more switches and substitutions in my diet, so by the time I move to my own apartment in a few years, I knew all there was to being a Vegan.
What I didn’t count on, was that I was going to make the complete switch a lot sooner than I had planned.
Less than a few weeks after I made my New Year’s resolution, I was already eating completely Vegan meals every day, and bought just about all the essential things I need in my pantry and fridge to make being Vegan an easy decision.
It was then that I declared to my friends and family that I was indeed now a Vegan.
So what does this all mean for AppleRunner?
It means that AppleRunner will be Veganized as well. Any recipes that come out here will be Vegan. Though if a recipe calls for something like Daiya (which is an amazing vegan cheese product), it can be easily substituted for real cheese, if you consume dairy.
I will focus on a lot of Vegan transition tips, and maybe even go back to Vegetarian tips, since it’s a natural first step to Veganism in many cases.
Realistically, I don’t know where being Vegan is going to take me in terms of what articles I’ll be writing, but I will take AppleRunner along for the ride.
