If you’re like me, you tend to let yourself go during the winter season. It’s usually the time when we bring out the chips, cookies and other santa-shaped goodies, despite trying hard all year to lose those extra pounds. Face it, when it’s cold out there, you just want to stay indoors and eat comfort food by the fire.
Well today I discovered a surprisingly healthy alternative to one of the usual comfort craving foods I mentioned. And yes, it includes a leafy green. Who woulda thunk it?
It is probably one of the easiest recipes with the yummiest result I have ever tried in my life. According to my dad, who tried it as soon as I pulled it out of the oven, it tastes like potato chips. And I have to agree. It does have a potato-y taste, but it’s all kale.
Or if you have trouble fitting in some leafy greens in your diet, this is just the thing for you.
- 1-2 bunches kale
- 1 Tbsp Apple Cider Vinegar
- 1 Tbsp Oil
- Salt or seasoning salt (to taste)
Preheat oven to 350 F
Wash and remove stems from Kale leaves. Tear, or chop leaves to chip size pieces.
Spread kale on baking sheet. Add apple cider vinegar and oil and salt/ seasoning onto kale. Mix together so it is evenly coated on all pieces.
Bake for 10 minutes or until crispy. Serve immediately!
(Don’t be put off by the obvious leafy look, just try it and prepare to be amazed!)
